Zucchini Lasagna Boats

 16 oz ground turkey
 6 zucchinis
 16 oz can fire roasted tomatoes
 1 bell pepper
 1 onion
 1 tsp minced garlic
 8 oz sliced mushrooms
 1 tsp italian seasoning
 1 cup shredded mozzarella
 salt and pepper

Cut your zucchini long ways and scoop the centers out, leaving the stem intact. 


Brown your meat with the garlic, mushrooms, onions, peppers, salt and pepper.  Once it is all soft add your tomatoes. 


Layer it into the zucchini halves and top with cheese. 


Bake for 30 minutes at 350F.
