Slice and saute your veggies slightly.
Spray the bottom of your slow cooker with non-stick cooking spray. Add the veggies.
Beat your eggs well and add the salt, pepper and greek yogurt. Combine very well.
Pour the egg mixture over the veggies. Stir a little. Add the cheese to the top.
Cook on low for 3-4 hours or on high for 1-2 hours. Make sure eggs are well set in the center.
