Garlic Shrimp Zucchini Boat
3 medium zucchini
24 oz 24 oz small shrimp (cooked)
2 cups spinach (cooked)
1 large tomato, chopped
¼ cup light alfredo sauce (can use the cauliflower based version)
4 cloves minced garlic
¼ cup shaved parmesan cheese
¼ cup shredded mozzarella parsley for garnish
Cut your zucchini in half and remove the flesh with a spoon.
Mix your shrimp with all remaining ingredients except mozzarella and parsley.
Fill the zucchini halves with the mixture.
Add mozzarella cheese and bake for 12 to 15 minutes. Garnish with the parlsey.
