Faux Potato Salad - Bariatric Women

 1 head cauliflower
 2 stalks celery, chopped
 10 baby dill pickles, chopped
 3 hard boiled eggs, chopped
 3 pieces cooked turkey bacon, chopped
 ½ cup plain Greek yogurt
 3 tbsp mustard
 salt and pepper, to taste
 green onions, to garnish

Boil cauliflower in salted water until it is soft. Allow it to cool.


Add celery, pickles, eggs, and bacon. Mix well.


Mix the Greek yogurt, mustard, salt, and pepper to make a dressing. Add pickle juice to thin, if needed.


Garnish with green onions and serve cold.
