Creamy Rainbow Zoodles and Shrimp

Yields4 Servings

 1 lb shrimp
 1 yellow bell pepper, cut into strips
 1 red bell pepper, cut into strips
 1 cup broccoli florets
 1 cup cherry tomatoes
 1 red onion, sliced thin
 2 zucchini, spiralized and water drained
 ¼ cup shredded carrots
 ¼ cup shredded purple cabbage
 ½ cup chicken broth
 ¼ cup cashew butter
 3 tbsp lemon juice
 ¼ cup parmesan cheese
 salt and pepper to taste

Saute your peppers, onions, broccoli in the garlic and herb seasoning. Salt and pepper to taste.

Remove from heat. Saute your shrimp the same way. Cook your zoodles just barely and drain all of the liquid.

Blend your cashew butter, lemon juice and broth together. Add to the zoodles and then toss the remaining veggies back in. Top with the cooked shrimp.
